Bealtaine is a festival which was marked as the Celtic beginning of summer and celebrated with large bonfires to honour the sun and mark a time of transition into the lighter months, with hope for a good harvest season ahead.
This feast will focus on flavours of the surrounding woodland, and local Irish vegetables at the peak of their season, all cooked over flames deep within the Finnebrogue forest.
